- Cooked quinoa or couscous
- Grilled or roasted chicken, sliced (optional, for non-vegetarian version)
- Cherry tomatoes, halved
- Cucumber, chopped
- Kalamata olives, pitted
- Feta cheese, crumbled
- Fresh mint and parsley, chopped
- Lemon vinaigrette sauce
Instructions
- Place the cooked quinoa or couscous in the bottom of the bowl.
- Add grilled chicken (if using) and top with cherry tomatoes, cucumbers, olives, and feta.
- Garnish with chopped mint and parsley.
- Drizzle with lemon vinaigrette.
